Parmesan Chicken Alfredo

According to Jenna, this is the best pasta dish she's ever tasted! This takes about an hour and ten minutes to make, but it's a super easy dish, and you could have it for dinner, or you could make it for lunch, like we did! :) We cut our chicken breast in half and cooked it, so it made more chicken.

Parmesan Encrusted Chicken:
Your preferred amount of chicken breasts (For two servings, we recommend 1 chicken breast)
1 cup of grated Parmesan cheese
2 pinches of pepper
2 pinches of herbed salt or plain salt
1 or more large eggs, depending on your amount of chicken breasts

Directions:
Preheat oven to 365 degrees Fahrenheit.
Crack the egg(s) into a separate dish.
Put the grated Parmesan, salt, and pepper in a separate dish and toss, coating the cheese.
Dip the chicken in the egg, then dip it in the cheese mixture.
Place the chicken in a glass baking dish and place in the preheated oven.
Cook for 30 minutes on both sides.

Alfredo:
1 box of quinoa fettuccine, or spaghetti.
1 package of Alfredo sauce mix (we used Simply Organic)
(Directions on packet)
Cook the pasta as directed, same goes for the Alfredo mix
Drain pasta, (it may stick together, put a little butter in there and it helps)

Assembly:
Cut up chicken into bite size pieces,
Put the pasta on plates,
Place the chicken on the pasta,
Pour a little sauce on top,
Garnish with a little extra Parmesan.
For a little healthy side, you could have salad with balsamic vinaigrette! French bread would be very good too. Dig in!
Enjoy the spice of life.
